Using a few pantry ingredients lifts this Roast Beef to the next level, it is full of flavour and creates a lovely coating on the outside of the beef. I like to use a piece of corner topside for this recipe but I’m sure that a rolled piece of beef would work just as well.
Based around a packet of French Onion Soup Mix I have played with the other ingredients over time and settled on this recipe a few years ago, but if for some reason I don’t have a particular ingredient I just replace it for something similar.
You can either cook this in the oven or in a slow cooker with very similar results, it depends on whether I am to be away from home for most of the day as to which way I choose to cook it. If I am to be away I will cook it in the slow cooker for 6-8 hours on low. Everybody’s slow cooker cooks differently so adjust cooking times or temperature to suit yours.
Roast Beef
Ingredients
- 1 1/2 Kg Beef Topside Roast
- 1 Pkt French Onion Soup Mix
- 2 tsp Seeded Mustard
- 1 tsp Dijon Mustard
- 1 tsp Garlic, crushed
- 1 Tbsp BBQ Sauce
- 3 Tbsp Tomato Sauce
- Pinch Salt
- Pinch Pepper
Instructions
- Combine soup mix, mustards, garlic and sauces to make a paste.
- Preheat oven 180C, line roasting tray with baking paper.
- Place beef in pan and spread paste all over, sprinkle with salt and pepper.
- Cover with foil or a lid and cook for 30 minutes per 500g of meat plus an extra 30 minutes, so for a 1 1/2kg piece of meat you would cook for 2 hours.
- Remove foil or lid, pour off the cooking liquid into a small saucepan and place the meat back into the oven to cook for a further 30 minutes to brown the meat.
- While the meat is finishing cooking simmer the cooking liquid on the stove to reduce and thicken you could thicken it with a little cornflour if you need.
- Serve the roast beef and sauce with mashed potatoes and steamed green vegetables.
SLOW COOKER
- Prepare beef as above and place in the slow cooker, cook on low for 6-8 hours, depending on you slow cooker.
- Reduce the cooking liquid as above.
