Roast Beef
Roast Beef flavoured with French Onion Soup, Mustard and Sauces

- 1 1/2 Kg Beef Topside Roast
- 1 Pkt French Onion Soup Mix
- 2 tsp Seeded Mustard
- 1 tsp Dijon Mustard
- 1 tsp Garlic, crushed
- 1 Tbsp BBQ Sauce
- 3 Tbsp Tomato Sauce
- Pinch Salt
- Pinch Pepper
Combine soup mix, mustards, garlic and sauces to make a paste.
Preheat oven 180C, line roasting tray with baking paper.
Place beef in pan and spread paste all over, sprinkle with salt and pepper.
Cover with foil or a lid and cook for 30 minutes per 500g of meat plus an extra 30 minutes, so for a 1 1/2kg piece of meat you would cook for 2 hours.
Remove foil or lid, pour off the cooking liquid into a small saucepan and place the meat back into the oven to cook for a further 30 minutes to brown the meat.
While the meat is finishing cooking simmer the cooking liquid on the stove to reduce and thicken you could thicken it with a little cornflour if you need.
Serve the roast beef and sauce with mashed potatoes and steamed green vegetables.
SLOW COOKER
Prepare beef as above and place in the slow cooker, cook on low for 6-8 hours, depending on you slow cooker.
Reduce the cooking liquid as above.
