Roast Beef

Roast Beef flavoured with French Onion Soup, Mustard and Sauces

Ingredients
  

  • 1 1/2 Kg Beef Topside Roast
  • 1 Pkt French Onion Soup Mix
  • 2 tsp Seeded Mustard
  • 1 tsp Dijon Mustard
  • 1 tsp Garlic, crushed
  • 1 Tbsp BBQ Sauce
  • 3 Tbsp Tomato Sauce
  • Pinch Salt
  • Pinch Pepper

Instructions
 

  • Combine soup mix, mustards, garlic and sauces to make a paste.
  • Preheat oven 180C, line roasting tray with baking paper.
  • Place beef in pan and spread paste all over, sprinkle with salt and pepper.
  • Cover with foil or a lid and cook for 30 minutes per 500g of meat plus an extra 30 minutes, so for a 1 1/2kg piece of meat you would cook for 2 hours.
  • Remove foil or lid, pour off the cooking liquid into a small saucepan and place the meat back into the oven to cook for a further 30 minutes to brown the meat.
  • While the meat is finishing cooking simmer the cooking liquid on the stove to reduce and thicken you could thicken it with a little cornflour if you need.
  • Serve the roast beef and sauce with mashed potatoes and steamed green vegetables.

SLOW COOKER

  • Prepare beef as above and place in the slow cooker, cook on low for 6-8 hours, depending on you slow cooker.
  • Reduce the cooking liquid as above.
