Apples, sultana’s and cinnamon combine in this recipe to make a delicious cake that can be served at Morning or Afternoon Tea, popped into a lunchbox or even served warm as a dessert with a dollop of cream or a scoop of vanilla ice cream.
You can choose to ice the cake with a plain icing sprinkled with extra cinnamon or I mostly sprinkle the cake batter with cinnamon sugar before baking, giving a lovely crunch.
I love melt and mix one bowl recipes, they are quick and easy to make with very little clean up.
Apple and Sultana Cake
Moist apple cake dotted with sultanas
Ingredients
- 125 gm Butter, melted
- 2 Eggs, lightly beaten
- 1/4 Cup Milk
- 2 Apples, peeled and coarsely grated I use Pink Lady
- 1 Cup Castor Sugar
- 1 Cup Sultanas
- 11/2 Cups Self Raising Flour
- 1 tsp Cinnamon
- 2 Tbsp Cinnamon Sugar Optional
Instructions
- Preheat oven 180C
- Line base and side of cake tin 20cm round or large loaf tin.
- In a large bowl combine butter, sugar, eggs and milk.
- Add grated apple, stir well.
- Stir in sifted flour and cinnamon with the sultanas.
- Pour into lined cake tin.
- Sprinkle with cinnamon sugar, if using
- Bake for 50-60 minutes or until cooked.
- Cool in tin
