Apple and Sultana Cake

Moist apple cake dotted with sultanas

Ingredients
  

  • 125 gm Butter, melted
  • 2 Eggs, lightly beaten
  • 1/4 Cup Milk
  • 2 Apples, peeled and coarsely grated I use Pink Lady
  • 1 Cup Castor Sugar
  • 1 Cup Sultanas
  • 11/2 Cups Self Raising Flour
  • 1 tsp Cinnamon
  • 2 Tbsp Cinnamon Sugar Optional

Method
 

  1. Preheat oven 180C
  2. Line base and side of cake tin 20cm round or large loaf tin.
  3. In a large bowl combine butter, sugar, eggs and milk.
  4. Add grated apple, stir well.
  5. Stir in sifted flour and cinnamon with the sultanas.
  6. Pour into lined cake tin.
  7. Sprinkle with cinnamon sugar, if using
  8. Bake for 50-60 minutes or until cooked.
  9. Cool in tin
