Perfect anytime these Zucchini and Halloumi Fritters can be served for breakfast, a light lunch, dinner, take to a BBQ, in a burger or make mini for appetisers.
You can pre make them and just reheat in a pan, microwave or even an air fryer. They will keep in the fridge for 3-4 days and freeze very well. They are a great alternative to toast to serve with poached eggs and maybe some crispy bacon and a tasty relish.
Use your favourite herb or spice to create the flavour you prefer.
Zucchini and Haloumi Fritters
Grated Zucchini and Haloumi Cheese Fritters
Ingredients
- 2 Large Zucchini, grated
- 200 gm Haloumi Cheese, grated
- 1/2 Onion, diced
- 1/2 Cup Plain Flour
- 3 Eggs
- Pinch Salt
- Pinch Pepper
- 1 tsp Italian Seasoning I use Screaming Seeds Bruschetta seasoning
- 1/4 Cup Parsley Chopped
- Pinch Dried Chili Flakes Optional
- Olive oil or Vegetable Oil for frying
Instructions
- In a large bowl place all ingredients except oil.
- Combine with a spoon and mix well.
- Heat a pan on medium heat add enough oil to shallow fry.
- Cook large spoonful of mixture 3-4 minutes per side until nicely browned.
- Transfer to a paper lined plate when cooked.
- Repeat until all mixture is used, adding more oil if needed
- Serve with your favourite dipping sauce.
Notes
Adding different fresh herbs will change the flavour eg: chopped coriander, mint, oregano etc, just use your favourites.
I freeze in packs of 2 in snap lock bags for an easy breakfast/meal to serve with poached eggs.
