Zucchini and Haloumi Fritters

Grated Zucchini and Haloumi Cheese Fritters

Course: Light meal

Ingredients
  

  • 2 Large Zucchini, grated
  • 200 gm Haloumi Cheese, grated
  • 1/2 Onion, diced
  • 1/2 Cup Plain Flour
  • 3 Eggs
  • Pinch Salt
  • Pinch Pepper
  • 1 tsp Italian Seasoning I use Screaming Seeds Bruschetta seasoning
  • 1/4 Cup Parsley Chopped
  • Pinch Dried Chili Flakes Optional
  • Olive oil or Vegetable Oil for frying

Method
 

  1. In a large bowl place all ingredients except oil.
  2. Combine with a spoon and mix well.
  3. Heat a pan on medium heat add enough oil to shallow fry.
  4. Cook large spoonful of mixture 3-4 minutes per side until nicely browned.
  5. Transfer to a paper lined plate when cooked.
  6. Repeat until all mixture is used, adding more oil if needed
  7. Serve with your favourite dipping sauce.

Notes

Adding different fresh herbs will change the flavour eg: chopped coriander, mint, oregano etc, just use your favourites.
I freeze in packs of 2 in snap lock bags for an easy breakfast/meal to serve with poached eggs.
