Zucchini and Haloumi Fritters

Grated Zucchini and Haloumi Cheese Fritters

Ingredients
  

  • 2 Large Zucchini, grated
  • 200 gm Haloumi Cheese, grated
  • 1/2 Onion, diced
  • 1/2 Cup Plain Flour
  • 3 Eggs
  • Pinch Salt
  • Pinch Pepper
  • 1 tsp Italian Seasoning I use Screaming Seeds Bruschetta seasoning
  • 1/4 Cup Parsley Chopped
  • Pinch Dried Chili Flakes Optional
  • Olive oil or Vegetable Oil for frying

Instructions
 

  • In a large bowl place all ingredients except oil.
  • Combine with a spoon and mix well.
  • Heat a pan on medium heat add enough oil to shallow fry.
  • Cook large spoonful of mixture 3-4 minutes per side until nicely browned.
  • Transfer to a paper lined plate when cooked.
  • Repeat until all mixture is used, adding more oil if needed
  • Serve with your favourite dipping sauce.

Notes

Adding different fresh herbs will change the flavour eg: chopped coriander, mint, oregano etc, just use your favourites.
I freeze in packs of 2 in snap lock bags for an easy breakfast/meal to serve with poached eggs.
