Stir fry’s are a quick to cook nutritious meal, they can be made using many variations of meats, seafood, vegetables or combinations of all.
I think it was back in the 80’s that I attended a series of Chinese Cooking classes which gave me some great basic techniques, marinades and recipes that I still use today.
Most importantly always cook your meat in batches in a hot pan or wok, overcrowding the pan tends to create the temperature in the pan to drop and the meat stews more than fries in the lower temperature.
Have all ingredients chopped, marinated etc before starting to cook because stir fry’s come together very quickly, so it is a dish that you can prepare the evening before then quickly cook when required taking about 15 minutes to put it on the table, don’t worry if you can’t marinate for long most times I marinate and cook straight away.
I use the same marinade for whatever meat I have, it gives any Chinese dish those authentic Chinese flavours.
Beef Stir Fry
Ingredients
- 500 gm Beef Strips I like them sliced thin
- 2 Tbsp Soy Sauce I like Pearl River Bridge
- 2 Tbsp Sherry
- 1 tsp Garlic crushed
- 2 tsp Fresh ginger grated
- 1/2 tsp Finely chopped chilli
- 2 tsp Sesame Oil
- 1 Onion sliced
- 1/2 Red Capsicum sliced
- 1 Zucchini Sliced
- 1 Carrot sliced
- 1 Cup Green beans sliced
- 1 Bunch Bok Choy or Pak Choy sliced
- 1-2 tsp Sesame Oil Extra
- 2 tsp Corn flour
- 2 Tbsp Oyster Sauce
- 1 Tbsp Hoisin Sauce
- 1 Tbsp Soy Sauce
- 1 Cup Water
Instructions
- Heat the extra Sesame oil in a large pan or wok, stir fry the vegetables a few minutes until cooked but still crunchy, only adding Bok choy or spinach in the last few minutes. set aside cooked vegetables in bowl till later.
- Remove vegetables from the pan and set aside in a bowl till later.
- In a large bowl combine the marinade ingredients, the soy sauce, sherry, sesame oil, garlic, ginger and chill.
- Combine the beef strips with the marinade ingredients
- Heat the pan or wok again and stir fry the beef strips in batches over high heat.
- In a jug blend cornflour, sauces and water, mix until smooth.
- Add sauce mixture to the pan and heat until boiling.
- Return the meat and vegetable to the pan and stir until coated in sauce and heated through.
- Serve with boiled/steamed rice.
