Slow Roasted Greek Lamb

Greek Lamb on souvlaki

I quite often cook this when we have family or friends around as it feeds a lot and you don’t even need to carve it as the meat just falls off the bone and then serve it with potatoes and a simple salad.

Lamb and the Greek flavours of lemon, garlic and oregano are made for each other and slow cooking brings out the sweet flavours of the meat and especially so when cooked on the bone.

This is a very low fuss recipe as there is very little to do, marinate the meat and then the oven does the rest. Bone in shoulder of lamb or leg of lamb are the best cuts to use.

Covering the lamb with a lid or foil allows the meat to stay moist as it cooks in its own juices, then remove the foil or lid for the last 30-45 minutes to brown the lamb.

Perfect served with salads, dips and wraps to make souvlaki’s.

Slow Roasted Greek Lamb

Lamb roasted with garlic, lemon and oregano
Prep Time 10 minutes
Cook Time 4 hours 30 minutes
Marinating 2 hours

Ingredients
  

  • 2 Kg Leg or Shoulder of lamb
  • 2 Tbsp Olive Oil
  • 4 tsp Garlic, crushed or cloves
  • 1 Lemon, finely grated rind and juice
  • 1 Tbsp Oregano, dried or Greek seasoning I use Screaming Seeds Greek Seasoning
  • 1 tsp Sea Salt

Garlic Sauce

  • 1/2 Cup Mayonnaise
  • 1/2 Cup Sour Cream
  • 1/2 tsp Garlic, crushed or half clove
  • 1/4 tsp Oregano or Greek seasoning
  • 1-2 tsp Parsley, chopped
  • 1 tsp Lemon rind, finely grated
  • 1-2 tsp Lemon juice

Instructions
 

  • In a glass or ceramic baking dish place the lamb and rub with the oil, garlic, lemon, herbs and salt. Cover and marinate the lamb in the fridge for at least 2 hours or overnight.

  • Preheat the oven 150C, remove the lamb from the fridge let stand at room temperature for 1 hour.

  • Cover with lid or foil and bake for 4 hours.
  • Remove lid or foil and increase the oven temperature to 190C and roast a further 30-45 minutes to brown. Rest covered for 20-30 minutes.

  • The meat will pull apart, serve with a salad of lettuce, tomato, cucumber, red onion, fetta olives and Garlic sauce.

Garlic Sauce

  • In a bowl combine all ingredients adding enough lemon juice to reach the consistency you prefer.
  • Beautiful served with slow roasted Lamb or souvlaki, as a dipping sauce for Greek Meatballs or Falafel.

Notes

This lamb is delicious served in wraps and is great to serve as a self serve meal for many.
