Roasted Parsnip and Pears

This is a great side that’s just a bit different to the regular side dish I know it sounds a bit strange but it works.

The pears and maple syrup or honey bring out the natural sweetness of the parsnips.

I love serving this side with roast pork or with pork fillets/medallions, but would pair well with any special dish.

Roasted Maple Parsnips and Pears

A deliciously sweet but savoury side dish

Ingredients
  

  • 3 Firm William Pears
  • 450 gm Small Parsnips
  • 1 Tbsp Pure Maple Syrup or Honey
  • 40 gm Butter
  • 1/2 tsp Dijon Mustard
  • 1 Tbsp Fresh Thyme leaves or 1 tsp dried

Method
 

  1. Heat the butter honey and mustard in the microwave or small saucepan, add thyme leave.
  2. Peel the parsnips and cut into small wedges.
  3. Cut the pears into 8 and remove core.
  4. On a lined baking tray toss the pears and parsnips with the honey mixture.
  5. Bake in oven 180C for 40-50 minutes or until cooked and golden, stir them at least once during cooking to ensure they cook evenly.

Delicious served as a side to a special meal.
