This is a great side that’s just a bit different to the regular side dish I know it sounds a bit strange but it works.
The pears and maple syrup or honey bring out the natural sweetness of the parsnips.
I love serving this side with roast pork or with pork fillets/medallions, but would pair well with any special dish.
Roasted Maple Parsnips and Pears
A deliciously sweet but savoury side dish
Ingredients
- 3 Firm William Pears
- 450 gm Small Parsnips
- 1 Tbsp Pure Maple Syrup or Honey
- 40 gm Butter
- 1/2 tsp Dijon Mustard
- 1 Tbsp Fresh Thyme leaves or 1 tsp dried
Instructions
- Heat the butter honey and mustard in the microwave or small saucepan, add thyme leave.
- Peel the parsnips and cut into small wedges.
- Cut the pears into 8 and remove core.
- On a lined baking tray toss the pears and parsnips with the honey mixture.
- Bake in oven 180C for 40-50 minutes or until cooked and golden, stir them at least once during cooking to ensure they cook evenly.
