Potato Bacon and Corn Chowder

When you are married to a potato farmer potatoes are a staple in our home and I enjoy coming up with new ways to use them in cooking. This soup is of the hearty chunky variety and is very flavoursome.

Chunky Potato Bacon and Corn Chowder

A chunky hearty soup

Ingredients
  

  • 1 Onion finely diced
  • 2 Stalks celery diced
  • 4 Rashers bacon, diced
  • 1 Tbsp Olive Oil
  • 800 gm Potatoes, peeled and diced
  • 1 1/2 Litres Stock – Chicken or vegetable
  • 1 Can Creamed Corn
  • Pinch White Pepper
  • Pinch Black Pepper

Instructions
 

  • In a large saucepan add oil, onion, bacon and celery, gently fry for 5 minutes or until onion is softened.
  • Add potatoes and fry a further minute.
  • Add the stock, creamed corn and the black and white pepper, bring to the boil.
  • Reduce heat and simmer uncovered for 20-25 minutes or until potatoes are tender.
