I was so excited when I found a hand written recipe of my Grandmothers, I had searched prior to starting this blog asking relatives and coming up blank. We all had plenty of her recipes but nothing in her hand writing so when I came across this recipe it was a surprise and I was so grateful to have found something to connect Nana to my blog because my love of baking and cooking started in her kitchen with its woodstove.
As far as I’m concerned Spicy Currant Snaps are one of Nana’s signature recipes, we loved it at home when she would bake a batch for us. A deliciously spiced biscuit filled with currants and coated in sugar, they fill me with joy when I eat them.
Spicy Currant Snaps
Deliciously spiced biscuits
Ingredients
- 125 gm Butter, room temperature
- 3/4 Cup Sugar
- 1 Egg
- 1 Tbsp Golden Syrup
- 3/4 Cup Currants
- 2 Cups Self Raising Flour
- 1 tsp Mixed Spice
- extra sugar for rolling
Instructions
- Preheat oven 180 C
- In a large bowl, cream butter and sugar until soft and fluffy
- Add egg and golden syrup, mix well
- Add flour, spice and currants, mix well
- Roll in heaped teaspoon sized balls
- Roll in extra sugar and flatten slightly
- Bake on lined baking trays for approximately 15-20 minutes
- Cool on trays
