Spicy Currant Snaps

Deliciously spiced biscuits

Ingredients
  

  • 125 gm Butter, room temperature
  • 3/4 Cup Sugar
  • 1 Egg
  • 1 Tbsp Golden Syrup
  • 3/4 Cup Currants
  • 2 Cups Self Raising Flour
  • 1 tsp Mixed Spice
  • extra sugar for rolling

Method
 

  1. Preheat oven 180 C
  2. In a large bowl, cream butter and sugar until soft and fluffy
  3. Add egg and golden syrup, mix well
  4. Add flour, spice and currants, mix well
  5. Roll in heaped teaspoon sized balls
  6. Roll in extra sugar and flatten slightly
  7. Bake on lined baking trays for approximately 15-20 minutes
  8. Cool on trays
