Mango and Lime Mousse

Mangos and limes go together well and make up the basis of this fruity mousse, it is not as sweet and heavy as most mousses so it is a lovely dessert to serve at the end of a meal.

  • Food Processor

Ingredients
  

  • 2 Large Mangos
  • 1/2 Cup Castor Sugar
  • 2 Limes-Rind and Juice
  • 300 ml Cream
  • 2 tsp Gelatine
  • 1/4 Cup Boiling Water

Instructions
 

  • Whip cream.
  • Dissolve gelatine in boiling water.
  • In food processor, process mango, rind, juice and sugar until smooth.
  • With the motor running on the food processor, slowly add gelatine in a steady stream.
  • Fold in whipped cream or pulse a few times in the processor.
  • Spoon into a serving bowl and set in fridge for 3-4 hours.
  • Serve with extra fresh mango and whipped cream.

Notes

This mousse would be lovely set in individual glasses.
