Lemon Hedgehog

A tangy lemon flavoured version of the classic hedgehog.

The freshness of lemon in a no bake slice, it is a perfect addition to any morning or afternoon tea.

Lemon Hedgehog

Ingredients
  

  • 1 Pkt Marie biscuits
  • 1/2 Cup Biscuit crumbs
  • 1 Cup Coconut
  • 1 Lemon rind grated
  • 125 gm Butter melted
  • 1/2 Can Condensed Milk
  • 2 Cups Icing Sugar
  • 1 tsp Butter
  • 1-2 tsp Lemon Juice
  • Boiling water

Instructions
 

  • Lin a slice tray with Glad Bake or Tin Foil
  • In a large bowl break up biscuits into small pieces, I like to do this by hand to have more control over the size.
  • Add biscuit crumbs, coconut and grated lemon rind to biscuits.
  • Melt butter in a jug then stir in the condensed milk until smooth and well combined.
  • Pour this mixture into the biscuit mixture and stir well.
  • Press firmly into the lined slice tray then smooth with the back of a spoon
  • In a bowl combine the icing sugar, butter, lemon juice and gradually add enough boiling water to make a smooth spreadable mix.
  • Spread icing onto slice and sprinkle with a little extra coconut if you like.
  • Put into the fridge to set for approximately 2 hours.
