A tangy lemon flavoured version of the classic hedgehog.
The freshness of lemon in a no bake slice, it is a perfect addition to any morning or afternoon tea.
Lemon Hedgehog
Lemon flavoured hedgehog slice
Ingredients
- 1 Pkt Marie biscuits
- 1/2 Cup Biscuit crumbs
- 1 Cup Coconut
- 1 Lemon rind grated
- 125 gm Butter melted
- 1/2 Can Condensed Milk
- 2 Cups Icing Sugar
- 1 tsp Butter
- 1-2 tsp Lemon Juice
- Boiling water
Instructions
- Lin a slice tray with Glad Bake or Tin Foil
- In a large bowl break up biscuits into small pieces, I like to do this by hand to have more control over the size.
- Add biscuit crumbs, coconut and grated lemon rind to biscuits.
- Melt butter in a jug then stir in the condensed milk until smooth and well combined.
- Pour this mixture into the biscuit mixture and stir well.
- Press firmly into the lined slice tray then smooth with the back of a spoon
- In a bowl combine the icing sugar, butter, lemon juice and gradually add enough boiling water to make a smooth spreadable mix.
- Spread icing onto slice and sprinkle with a little extra coconut if you like.
- Put into the fridge to set for approximately 2 hours.
