Curried rice salad has always been a big favourite of mine, it is a great salad to take along to a barbeque as a side dish or it is good to have in the fridge as a quick meal option.
The addition of the apple and sultanas adds a slight sweet twist to this salad, it is lovely and colourful and full of flavour.
Curried Rice Salad
A rice salad with a curry dressing
Ingredients
- 3 Cups Cooked Long grain rice I use Basmati
- 1/2 Apple, Cored and diced
- 3 Spring Onions, chopped
- 1/2 Red Capsicum, Diced
- 1/3 Cup Sultanas or Raisins
- 1/3 Cup Parsley, chopped
- 1/3 Cup Peanuts Optional
Dressing
- 1/4 Cup Olive oil
- 1/3 Cup White vinegar
- 2 tsp Curry powder
- 1/2 tsp Turmeric
- 1 Tbsp Castor Sugar
- 1 tsp or Clove Garlic, crushed
- Pinch Salt and Pepper
Instructions
- Into a large bowl place rice and remaining salad ingredients, stir to combine.
Dressing
- In a medium sized screw top jar combine all dressing ingredients and shake well to combine.
- Pour dressing over the salad and stir gently to combine.
- Serve with barbequed or grilled meat, chicken or fish.
Notes
Peanuts could be replaced with cashews.
