Curried Rice Salad

Curried rice salad has always been a big favourite of mine, it is a great salad to take along to a barbeque as a side dish or it is good to have in the fridge as a quick meal option.

The addition of the apple and sultanas adds a slight sweet twist to this salad, it is lovely and colourful and full of flavour.

Curried Rice Salad

Ingredients
  

  • 3 Cups Cooked Long grain rice I use Basmati
  • 1/2 Apple, Cored and diced
  • 3 Spring Onions, chopped
  • 1/2 Red Capsicum, Diced
  • 1/3 Cup Sultanas or Raisins
  • 1/3 Cup Parsley, chopped
  • 1/3 Cup Peanuts Optional
Dressing
  • 1/4 Cup Olive oil
  • 1/3 Cup White vinegar
  • 2 tsp Curry powder
  • 1/2 tsp Turmeric
  • 1 Tbsp Castor Sugar
  • 1 tsp or Clove Garlic, crushed
  • Pinch Salt and Pepper

Method
 

  1. Into a large bowl place rice and remaining salad ingredients, stir to combine.
Dressing
  1. In a medium sized screw top jar combine all dressing ingredients and shake well to combine.
  2. Pour dressing over the salad and stir gently to combine.
  3. Serve with barbequed or grilled meat, chicken or fish.

Notes

Peanuts could be replaced with cashews.
