Curried Rice Salad
A rice salad with a curry dressing

- 3 Cups Cooked Long grain rice I use Basmati
- 1/2 Apple, Cored and diced
- 3 Spring Onions, chopped
- 1/2 Red Capsicum, Diced
- 1/3 Cup Sultanas or Raisins
- 1/3 Cup Parsley, chopped
- 1/3 Cup Peanuts Optional
Dressing
- 1/4 Cup Olive oil
- 1/3 Cup White vinegar
- 2 tsp Curry powder
- 1/2 tsp Turmeric
- 1 Tbsp Castor Sugar
- 1 tsp or Clove Garlic, crushed
- Pinch Salt and Pepper
Dressing
In a medium sized screw top jar combine all dressing ingredients and shake well to combine.
Pour dressing over the salad and stir gently to combine.
Serve with barbequed or grilled meat, chicken or fish.
Peanuts could be replaced with cashews.
