Chicken soup is so comforting and this one is especially so, it is not a heavy soup so it can be enjoyed year round.
Chicken and Lemon Soup
A feel good chicken soup that is light enough to enjoy year round, but is full of goodness.
Ingredients
- 4 Chicken Thighs
- 1 Onion finely diced
- 2 Stalks Celery finely diced
- 1 Tbsp Olive Oil
- 1 tsp Garlic or 1 clove crushed
- 1 Lt Chicken Stock
- 2 Cups Water
- 1 Cup Risoni
- 1 Lemon, Rind grated and juiced
- 1/4 Cup Parsley Chopped
- Pinch Black pepper
- Pinch White Pepper
Instructions
- In a large Saucepan fry the onion, celery and garlic in olive oil until softened.
- Add Stock and water with the chicken thighs and pepper.
- Simmer 20 minutes.
- Remove chicken and shred with 2 forks and set aside.
- Add risoni and cook for 6-8 minutes, stirring so the pasta dosen't stick to the bottom of the pan.
- Return the chicken to the soup with the lemon rind, lemon juice and parsley, cook a couple of minutes then serve.
