Chicken and Lemon Soup

A feel good chicken soup that is light enough to enjoy year round, but is full of goodness.

Ingredients
  

  • 4 Chicken Thighs
  • 1 Onion finely diced
  • 2 Stalks Celery finely diced
  • 1 Tbsp Olive Oil
  • 1 tsp Garlic or 1 clove crushed
  • 1 Lt Chicken Stock
  • 2 Cups Water
  • 1 Cup Risoni
  • 1 Lemon, Rind grated and juiced
  • 1/4 Cup Parsley Chopped
  • Pinch Black pepper
  • Pinch White Pepper

Instructions
 

  • In a large Saucepan fry the onion, celery and garlic in olive oil until softened.
  • Add Stock and water with the chicken thighs and pepper.
  • Simmer 20 minutes.
  • Remove chicken and shred with 2 forks and set aside.
  • Add risoni and cook for 6-8 minutes, stirring so the pasta dosen't stick to the bottom of the pan.
  • Return the chicken to the soup with the lemon rind, lemon juice and parsley, cook a couple of minutes then serve.
