I love an all in one dish that cooks in the oven because once it is in the oven there is nothing more to do. This one is a variation of my delicious Creamy Lemon Chicken and Rice recipe.
The vibrant yellow colour is beautiful and the aromas it produces are mouth watering to say the least.
The flavours cook right into the rice, chicken and sweet potato and serving it with an optional dollop of Tzatziki freshens up the dish.
Turmeric Chicken and Rice
An all in one chicken and rice dish with beautiful turmeric flavours.
Ingredients
- 1 Cup Arborio Rice
- 1 kg Chicken, Thighs, Tenderloins or Breast
- 1-2 Cups Sweet Potato or Pumpkin, Peeled and Diced
- 3 tsp Garlic, crushed
- 3 tsp Ginger, finely chopped or grated
- 1/2 tsp Chilli paste
- 2 tsp Turmeric
- 1 tsp Paprika
- 300 gm Can Coconut cream
- 300 ml Chicken Stock
- 100 gm Butter
- 1 Lemon, juiced
- 1/4 Cup Chopped parsley
- 100 gm Baby spinach
- Pinch Salt
- Pinch Pepper
- 1 Cup Tzatziki to serve
Instructions
- Preheat the oven 180 C
- Grease a large oven dish (lasagne tray)
- Sprinkle raw rice over the base of the dish.
- In a medium saucepan heat the stock, butter, coconut cream, lemon juice. garlic, ginger, chilli, turmeric, paprika and spinach, cook 20 minutes or Thermomix 20min/80C/Sp2 Reverse.
- Place chicken and sweet potato over rice sprinkle with salt and pepper.
- Add chopped parsley to sauce and pour over chicken.
- Bake uncovered for 45 minutes or until the chicken is cooked through.
- Serve with a dollop of Tzatziki.
