Preheat the oven 180 C
Grease a large oven dish (lasagne tray)
Sprinkle raw rice over the base of the dish.
In a medium saucepan heat the stock, butter, coconut cream, lemon juice. garlic, ginger, chilli, turmeric, paprika and spinach, cook 20 minutes or Thermomix 20min/80C/Sp2 Reverse.
Place chicken and sweet potato over rice sprinkle with salt and pepper.
Add chopped parsley to sauce and pour over chicken.
Bake uncovered for 45 minutes or until the chicken is cooked through.
Serve with a dollop of Tzatziki.
