Banana cake is a staple in many kitchens, helping to use up over ripe bananas and turning them into a delicious treat. The use of Buttermilk in this recipe gives a lovely light texture to the cake.
Banana Cake
Easy banana cake, great for lunch boxes, afternoon tea or anytime. I was lucky enough for a friend to share this recipe with me many years ago and it has become a regular on baking days
Ingredients
- 90 gm Butter melted
- 3/4 cup Milk adding 2 tsp lemon juice or white vinegar to milk makes buttermilk
- 2 tsp Lemon juice
- 3/4 cup Castor sugar
- 1 Egg
- 2 Bananas peeled and mashed
- 1 1/2 cups Self Raising Flour
- 1/2 tsp Bicarb soda
Instructions
- Preheat Oven 180 C, line a large loaf pan with baking paper.
- Add lemon juice to the milk and let stand for about 15-30 minutes, it will start to become lumpy.
- Combine melted butter, sugar, egg, milk and bananas.
- Add flour and bicarb soda, stir well and pour into prepared tin
- Bake for 40-45 mins or until cooked.
- Cool in tin for 15 mins then tip out onto a cooling rack until cool.

Tip
This banana cake can be served with or without a basic lemon icing or served warm as a dessert with caramel sauce, it is delicious and never fails to impress.
