Banana Cake

Easy banana cake, great for lunch boxes, afternoon tea or anytime. I was lucky enough for a friend to share this recipe with me many years ago and it has become a regular on baking days

Ingredients
  

  • 90 gm Butter melted
  • 3/4 cup Milk adding 2 tsp lemon juice or white vinegar to milk makes buttermilk
  • 2 tsp Lemon juice
  • 3/4 cup Castor sugar
  • 1 Egg
  • 2 Bananas peeled and mashed
  • 1 1/2 cups Self Raising Flour
  • 1/2 tsp Bicarb soda

Method
 

  1. Preheat Oven 180 C, line a large loaf pan with baking paper.
  2. Add lemon juice to the milk and let stand for about 15-30 minutes, it will start to become lumpy.
  3. Combine melted butter, sugar, egg, milk and bananas.
  4. Add flour and bicarb soda, stir well and pour into prepared tin
  5. Bake for 40-45 mins or until cooked.
  6. Cool in tin for 15 mins then tip out onto a cooling rack until cool.

Notes

Tip
This banana cake can be served with or without  a basic lemon icing or served warm as a dessert with caramel sauce, it is delicious and never fails to impress.
