Tender diced beef, bacon and capsicum cooked in a smoky tomato sauce. A lovely meat dish to serve with rice, mashed potatoes or buttered noodles.
If you wanted to make this a one pot meal you could add diced potatoes in the last hour of cooking.
This make great bowl food, there is nothing better than eating a warming bowl of food just with a fork, it is such a relaxed no fuss way of eating.
Paprika Beef
Beef and Bacon in a Smoky Tomato Sauce
Ingredients
- 2 Tbsp Vegetable Oil
- 2 tsp Garlic
- 1 Large Onion, halved and sliced
- 1 Red Capsicum sliced
- 4 Bacon rashers, sliced
- 1 Kg Diced Beef
- 2-3 Tbsp Smoked Paprika
- 2 400g Cans Diced tomatoes
- 1/2 Cup Sour Cream Optional
Instructions
- Preheat oven 160C.
- Heat half the oil in a large oven proof casserole dish
- Add onion, capsicum, bacon and garlic, cook 5-10 minutes until soft.
- Remove from pan and set aside.
- Heat remaining oil in same pan, cook beef in batches a few minutes until browned.
- Add paprika, cook a few minutes to coat the meat.
- Add tomatoes and the bacon mixture and stir through, bring to the boil.
- Cover and cook in the oven for 2 1/2 hours.
- Stir through sour cream if you are using.
- Serve with rice, buttered noodles or mashed potatoes.
Notes
Spinach and chopped parsley could be added before the sour cream.
Easy to halve this dish if too large a quantity.
