Lamb Shanks are very popular on pub and restaurant menu’s these days, due to the long slow cooking required they are a dish that can be prepared prior to service and heated to order.
They are so easy to cook they just need low and slow cooking to produce fall off the bone tender meat with an almost gelatinous quality. This recipe was shared with me from my sister in-law and I thought at the time hmm I’m not sure it can be as delicious as stated but I stand corrected it is a very simple recipe that give fantastic results.
Mashed potato is the perfect side to serve with the shanks and maybe a lovely piece of bread to mop up the gravy.
Slow Cooked Mint Lamb Shanks
Tender lamb shanks in a mint gravy
Equipment
- 1 Slow Cooker
Ingredients
- 4 Frenched Lamb Shanks
- 2 Tbsp Plain Flour
- Pinch Salt
- Pinch Pepper
- 1 Cup Mint Jelly
- 1 Cup Tomato Sauce
- 1 Cup Water
Instructions
- Place flour, salt and pepper in a freezer bag, toss the lamb shanks in the flour.
- Place the Shanks in a greased slow cooker bowl.
- Mix the sauces and water together.
- Pour over the shanks and cook on low for 7-8 hours
- Serve with mashed potato.
Notes
If the sauce is too thin place in a small saucepan and simmer until reduced by half.
