I was lucky that a friend shared this recipe with me a few years ago and since then it has become a regular on the menu at home, I have tweaked it a little over time but it is still one of the easiest casseroles that I make.
Its a pretty simple old school recipe but it produces a very comforting week night meal that is delicious served with mashed potatoes and steamed vegetables and is great to serve on a cold night.
Golden Sausage Casserole
Sausages in a delicious sauce
Ingredients
- 8-10 Sausages
- 2 Tbsp Plain Flour
- 2 Tbsp Tomato Sauce or Chutney
- 1 Tbsp Soy Sauce
- 2 Tbsp Sugar
- 1 tsp Curry powder
- 1 Tbsp BBQ Sauce
- 2 Tbsp Worcestershire Sauce
- 1 Onion, finely chopped
- 1 Tbsp Olive oil
- 1 1/2 Cups Boiling Water
- 1 Carrot, grated and/or Parsnip
Instructions
- Fry onion in oil in a fry pan until lightly browned.
- Cook sausages in same pan until lightly browned.
- Preheat oven 180 C
- Put the onions into a greased casserole dish, sprinkle with the grated carrot.
- Place the sausages on top.
- Combine the remaining ingredients and pour over the sausages.
- Cover and bake about 30-40 minutes.
- Serve with mashed potatoes and steamed vegetables.
Notes
Using chipolata (mini sausages) would be a great idea if you are feeding a crowd or taking a casserole somewhere for a shared meal.
Adding some bacon to this casserole is also lovely.
