Marinades

Having a number of simple marinades to use on a variety of meats, vegetables, seafood, tofu or haloumi means you have endless flavour combinations to dress up the most plain meal.

The basic rule of a marinade is to combine an oil/fat (olive oil/coconut milk), with herbs/spices/flavour (garlic/oregano/chilli/sauce), with an acid (vinegar/lemon/lime). Make sure you have enough of the marinade to coat whatever you are marinating but before cooking let the excess drip off.

Depending on what you are cooking an hour in the marinade will be enough, if you are cooking a slow cooked roast of lamb overnight is preferable, but seafood only needs 30 minutes as the acid in the marinade will start the cooking process.

Ingredients
  

Greek Marinade

  • 2 Tbsp Olive Oil
  • 2-3 Tbsp Screaming Seeds Greek Lamb Seasoning or combination of oregano, marjoram, rosemary
  • 2 tsp Garlic crushed
  • 1 Lemon-rind and juice
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper

Maple Mustard Marinade

  • 2 Tbsp Olive Oil
  • 1 Tbsp Seeded Mustard Wholegrain Mustard
  • 1 1/2 Tbsp Maple Syrup or Honey
  • 1 Tbsp Balsalmic Vinegar or Lemon juice
  • Pinch Sea Salt
  • Pinch Black Pepper

Italian Marinade

  • 2 Tbsp Olive Oil
  • 2 Tbsp Balsamic Vinegar
  • 1 tsp Dried Basil leaves
  • 1 tsp Dried Oregano
  • 2 tsp Garlic Crushed 2 cloves
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black Pepper

Thai Coconut Marinade

  • 1 tsp Garlic crushed 1 clove
  • 2 tsp Ginger minced
  • 1 tsp Chilli minced or paste
  • 1 tsp Lemongrass minced
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • 1 Tbsp Chopped Coriander stalks Optional
  • 1 Cup Coconut milk

Asian Marinade

  • 1 tsp Sesame Seed Oil
  • 1 tsp Garlic
  • 1 tsp Ginger
  • 1/2 tsp Chilli
  • 2 Tbsp Abc Soy Sauce
  • 1 Tbsp Sweet Chilli Sauce

Smokey Marinade

  • 1 Tbsp Brown Sugar
  • 1 tsp Garlic
  • 1/2 tsp Chilli
  • 2 Tbsp Smoked Paprika
  • 2 Tbsp Olive Oil

Easy Satay Marinade

  • 2 Tbsp Bottles Satay Sauce
  • 2-3 Tbsp Bottled French Dressing

Instructions
 

  • Combine marinade ingredients and use on your choice of meat, seafood or veg.
  • Marinate for at least 30 mins.
  • Cook on the grill, bbq or in the oven.

Notes

Please just use these marinades as a guide and use your favourite flavours to make your own to your taste.
