- Preheat Oven 190 C
- Grease quiche dish or line a slice dish.
- In a large bowl add zucchini, onion, bacon, cheese and flour, stir well.
- Add eggs, oil, salt and pepper combine well.
- Pour into quiche dish or slice tray.

- Bake 30-40 minutes or until set and browned.
Notes
Vegetables can be substituted or added - diced capsicum, corn kernels, grated carrot, grated sweet potato, shredded spinach.
Bacon can be omitted for a vegetarian version.
Cook in mini muffin trays approximately 20 minutes
Cook in pie maker 6-8 minutes.
Freezes well.
I have made it using gluten free flour or ground rice with no difference to the end result.
