Shepherds Pie

Lamb or beef in gravy topped with mashed potatoes

Ingredients
  

  • 1 Tbsp Olive Oil
  • 500 gm Minced Lamb or Beef
  • 1/2 Onion, finely diced or grated
  • 1 Carrot, diced or grated
  • 1 Parsnip, grated Optional
  • 1/2 Zucchini, grated optional
  • 2 Tbsp Gravox powder
  • 1 Tbsp Worcestershire Sauce
  • 2 Tbsp Tomato Sauce
  • 1 Cup Water
  • Pinch White Pepper
  • 2-3 Large Potatoes, peeled and diced
  • 1 Tbsp Butter
  • 1/3 Cup Milk
  • 3/4 Cup Tasty Cheese, grated Optional
  • 2 Tbsp Butter, extra, Small dice

Method
 

  1. Heat oil in fry pan over medium heat, add onion and lamb or beef, stirring to break up any lumps, cook until browned 4-5 minutes.
  2. Add carrot, parsnip and zucchini cook a further 3-4 minutes.

  3. Combine gravy powder, sauces, pepper and water, whisk until smooth.

  4. Preheat oven 170C
  5. Stir into the meat mixture and bring to the boil, simmer for 20 minutes.

  6. Pour meat into greased 2Lt oven proof dish or into individual ramekin dishes.

  7. In saucepan cover potatoes with water bring to the boil and simmer 20 minutes or until potatoes are cooked.

  8. Drain water off and mash potatoes, add butter and milk, mash until smooth.

  9. Spoon potatoes on top of the meat and sprinkle with cheese and dot with butter.
  10. Bake in oven for 30-40 minutes until the top is browned.

  11. Serve with a salad or steamed vegetables.

Notes

Consider doubling this and freeze some for later.
Extra vegetables can be added like peas, corn and beans.
