Rocket, Pear and Parmesan Salad
Salad of Rocket leaves, sliced pears and shaved parmesan Cheese

- 4 Cups Rocket Leaves
- 1 Firm Pear, cored and sliced
- 1/4 Small Red Onion, finely sliced
- 30 gm Fresh Parmesan Cheese, Shaved
- 1/4 Cup Walnuts, chopped
Dressing
- 1 Tbsp Seeded Mustard
- 1 tsp Dijon Mustard
- 1 Tbsp Fresh Lemon Juice
- 2 Tbsp Olive oil
- Pinch Salt
- Pinch Black Pepper
Lightly toast the nuts, they can be left plain if preferred.
In a bowl whisk all the dressing ingredients together and set aside.
Core and slice the pear, add to the dressing with the sliced onion and mix to coat.
To a large salad bowl add the rocket then the pear, onion, cheese, walnuts and remaining dressing toss lightly and serve immediately.
The walnuts can be substituted with pine nuts or almonds.
The dressing can be substituted with a bought balsamic glaze.
