In a large pan add butter, honey, salt, vanilla, cinnamon, stir until melted or in the Thermomix 2 Mins/Varoma/Sp1
Add the almonds and stir to coat or in Thermomix 30 Sec/reverse/Sp1
Spread almonds over lined oven trays and roast in the oven for 20 minutes or so stirring every 5 minutes, you know when they are ready when the honey mixture bubbles and becomes sticky like caramel.
In a large container with a lid put in the sugar and the extra salt, shake to mix add the almonds shaking well to coat the almonds in sugar.
Spread the sugar coated almonds on to fresh lined oven trays to cool completely.
Once cold break the almonds apart and store in airtight containers or jars.
