Pork and Apple Tray Bake

Ingredients
  

  • 4 Pork loin steaks or pork chops
  • 2-3 Apples Peeled and sliced
  • Pinch Salt
  • Pinch Pepper
  • 1/2 tsp Cinnamon, divided
  • 1/4 tsp Nutmeg, divided

Glaze

  • 60 gm Butter
  • 1 Tbsp Maple Syrup
  • 1 tsp Dijon Mustard
  • 1 tsp Seeded Mustard
  • 1/4 Cup Brown Sugar

Instructions
 

  • Place the sliced apples in a greased oven proof dish or tray, sprinkle with half of the cinnamon and nutmeg.

  • Place pork on top of the apple slices and season with salt and pepper.

  • Preheat oven to 180 C.

Glaze

  • In a medium saucepan over medium high heat, combine maple syrup, mustards, butter and brown sugar. Whisk until butter is melted and incorporated, then stir in the remaining cinnamon and nutmeg.

  • You could thicken the glaze with 1/2 Tbsp of corn flour if you think it needs it.
  • Pour the glaze over the pork and apples, bake for 30-40 minutes, or until pork os cooked.

  • Serve with mash and steamed greens.
