Place the sliced apples in a greased oven proof dish or tray, sprinkle with half of the cinnamon and nutmeg.
Place pork on top of the apple slices and season with salt and pepper.
Preheat oven to 180 C.
Glaze
In a medium saucepan over medium high heat, combine maple syrup, mustards, butter and brown sugar. Whisk until butter is melted and incorporated, then stir in the remaining cinnamon and nutmeg.
You could thicken the glaze with 1/2 Tbsp of corn flour if you think it needs it.
Pour the glaze over the pork and apples, bake for 30-40 minutes, or until pork os cooked.
