Poached Cherries
Cherries poached in a lightly spiced syrup

- 1/2 Cup Castor Sugar
- 1/2 Cup Water
- 1 Cinnamon Stick
- 1 tsp Vanilla Paste
- 300 gm Cherries, halved, pitted
- 1/2 Lemon - Juice only
Place water, sugar, cinnamon stick and vanilla in a saucepan, stir over medium heat until the sugar dissolves and the mixture boils, simmer 5 minutes.
Meanwhile halve and pit the cherries.
Add the cherries and lemon juice to the pan, cook for a further 10 minutes.
Cool then remove the cinnamon stick, refrigerate until chilled.
If you want a thicker syrup add a mixture of 2 tsp of Arrowroot and a little water in the last few minutes of cooking time.
Perfect served over Cereal, Ice cream, Pancakes, Panna cotta, Yoghurt, Baked Cheesecake, Meringues.
You could replace the Cinnamon Stick with Star Anise or Cloves; add 1 Tbsp of your favourite liquor, Kirsch, Brandy, Grand Marnier or Amaretto: finely grated Lemon or Orange Rind would be a lovely addition.
