Mock Fish

Grated Potato Cakes

Course Light meal, Side Dish

Ingredients
  

  • 4-5 Large Potatoes Peeled
  • 1/2 Onion grated
  • 2-3 Tbsp Plain Flour Gluten Free is Fine
  • 1 Egg
  • Pinch Salt
  • Pinch Pepper
  • Vegetable Oil to shallow fry

Instructions
 

  • Grate potatoes, place into new chux or muslin
  • Squeeze out excess liquid from potatoes
  • Combine all remaining ingredients except oil
  • Over medium heat, heat oil in a fry pan and drop spoonful's into oil, cook 5-10 minutes
  • Turn and cook on other side a further 5-10 minutes or until golden
  • Drain on kitchen paper, keep warm in a low oven whilst cooking remaining mixture
  • Serve with a generous sprinkle of salt.
