Mock Fish

Grated Potato Cakes

Total Time 30 minutes
Course: Light meal, Side Dish

Ingredients
  

  • 4-5 Large Potatoes Peeled
  • 1/2 Onion grated
  • 2-3 Tbsp Plain Flour Gluten Free is Fine
  • 1 Egg
  • Pinch Salt
  • Pinch Pepper
  • Vegetable Oil to shallow fry

Method
 

  1. Grate potatoes, place into new chux or muslin
  2. Squeeze out excess liquid from potatoes
  3. Combine all remaining ingredients except oil
  4. Over medium heat, heat oil in a fry pan and drop spoonful's into oil, cook 5-10 minutes
  5. Turn and cook on other side a further 5-10 minutes or until golden
  6. Drain on kitchen paper, keep warm in a low oven whilst cooking remaining mixture
  7. Serve with a generous sprinkle of salt.
