Chocolate Fudge Bars

Ingredients
  

  • 200 gm Butter, melted
  • 1 tsp Vanilla Extract
  • 3/4 Cup Sugar
  • 1 1/2 Tbsp Cocoa
  • 1 Egg
  • 1 1/4 Cup Coconut
  • 1 1/2 Cups Plain flour

Icing

  • 50 gm Butter, softened
  • 2 tsp Cocoa
  • 2 Cups Icing Mixture
  • 1-2 Tbsp Boiling Water

Instructions
 

  • Preheat oven 160C.
  • Line a slice tray with baking paper.
  • In a large bowl combine the melted butter, sugar, vanilla, cocoa and egg.
  • Stir in the coconut and flour, mix until well combined.
  • Press into lined slice tray.
  • Bake for 25 minutes, remove from the oven and cool for 30 minutes.

Icing

  • Combine butter, icing mixture, cocoa and enough boiling water to make a thick smooth icing.
  • Spread the icing over warm slice and sprinkle with a little coconut, allow to cool in the tin.
  • Cut into pieces anywhere from 12 to 36.

Notes

Make sure to ice the slice while still warm.
Store in an airtight container for 5 days.
Slice freezes well.
