Chocolate Fudge Bars

Baked chocolate and coconut slice

Ingredients
  

  • 200 gm Butter, melted
  • 1 tsp Vanilla Extract
  • 3/4 Cup Sugar
  • 1 1/2 Tbsp Cocoa
  • 1 Egg
  • 1 1/4 Cup Coconut
  • 1 1/2 Cups Plain flour
Icing
  • 50 gm Butter, softened
  • 2 tsp Cocoa
  • 2 Cups Icing Mixture
  • 1-2 Tbsp Boiling Water

Method
 

  1. Preheat oven 160C.
  2. Line a slice tray with baking paper.
  3. In a large bowl combine the melted butter, sugar, vanilla, cocoa and egg.
  4. Stir in the coconut and flour, mix until well combined.
  5. Press into lined slice tray.
  6. Bake for 25 minutes, remove from the oven and cool for 30 minutes.
Icing
  1. Combine butter, icing mixture, cocoa and enough boiling water to make a thick smooth icing.
  2. Spread the icing over warm slice and sprinkle with a little coconut, allow to cool in the tin.
  3. Cut into pieces anywhere from 12 to 36.

Notes

Make sure to ice the slice while still warm.
Store in an airtight container for 5 days.
Slice freezes well.
