Avocado and Mango Salad

Ingredients
  

  • 100 g Spinach and Rocket or Mixed Salad Leaves
  • 1 Carrot, cut in small matchsticks
  • 1 Red Onion, sliced finely
  • 1 Avocado, diced
  • 1 Mango, diced
  • 100 g Pkt Fried noodles I use Changs
  • 1 Long Red Chilli, deseeded and finely chopped
  • 1/2 Cup Cashews
Dressing
  • 1/2 Cup Olive Oil
  • 1/2 Cup Brown Sugar
  • 2 Tbsp Fish Sauce
  • 2 Tbsp Lemon Juice
  • 1 Tbsp Lime Juice

Method
 

  1. In a large shallow dish or bowl add the salad ingredients.
  2. In a jar combine the dressing ingredients, shake well.
  3. Pour the dressing over the salad just prior to serving

Notes

You could add other salad ingredients or swap out any ingredients to your taste.
Make sure the dressing only goes on when you are about to serve to keep the salad fresh.
