Potato and Bacon Frittata
This dish is a quick and easy mid week meal.
Ingredients
- 1 tbsp Olive Oil
- 1 Clove of Garlic or 1 tsp
- 4 Large Potatoes – peeled and diced
- 1 Med Onion finely sliced
- 4 Rashers Bacon finely sliced
- 1 Handful spinach leaves finely sliced
- 8 Eggs
- 1/2 cup Milk
- 1/2 cup Tasty Cheese – grated
- 1/4 cup Parmesan Cheese
- 1 Pinch Salt
- 1 Pinch Black Pepper
Instructions
- Preheat oven 180C
- Boil or steam potatoes until just tender, drain and set aside.
- Heat oil in pan cooking onion, garlic and bacon stirring until onion is soft, add spinach cook until wilted, add to the potatoes with half the cheese toss until combined and put into greased quiche dish.
- Whisk eggs and milk in jug,pour over potato mixture sprinkle with salt, pepper and remaining cheese, bake in oven approximately 45 minutes or until browned and egg mixture is just set.
