Poached Cherries
Ingredients
- 1/2 Cup Castor Sugar
- 1/2 Cup Water
- 1 Cinnamon Stick
- 1 tsp Vanilla Paste
- 300 gm Cherries, halved, pitted
- 1/2 Lemon - Juice only
Instructions
- Place water, sugar, cinnamon stick and vanilla in a saucepan, stir over medium heat until the sugar dissolves and the mixture boils, simmer 5 minutes.
- Meanwhile halve and pit the cherries.
- Add the cherries and lemon juice to the pan, cook for a further 10 minutes.
- Cool then remove the cinnamon stick, refrigerate until chilled.
- If you want a thicker syrup add a mixture of 2 tsp of Arrowroot and a little water in the last few minutes of cooking time.
Notes
Poached cherries or compote is a delightful way of using cherries when they are plentiful so make the most of cherry season with this quick and easy recipe, where plump cherries are poached in a lightly spiced syrup.
Very simple to make with just 6 basic ingredients, the vibrant Red/Purple colour of poached cherries is the perfect topping for your Ice cream, Pancakes, Panna cotta, Baked Cheesecake, Yoghurt, Meringues, Cereal etc.
Delicious served warm or chilled, they can also be stored in their syrup for several days.
You could change the flavour of the poached cherries by adding the grated rind of lemon or orange, add a Tbsp of your favourite liquor, Brandy, Kirsch, Grand Marnier or Amaretto, or replace the Cinnamon Stick with Star Anise, Cloves.
Add a couple of teaspoons of Arrowroot mixed with water in the last couple of minutes to thicken the sauce of the poached cherries.
