When it comes to special meals Lamb racks are a favourite in our household, I love to serve them in many different ways and this recipe is lovely with it’s pistachio and mustard crust.
Although Lamb Racks are a little pricey they do come trimmed so there is no waste and meat cooked on the bone is full of flavour and racks are relatively quick to cook. Also if you were to eat them in a restaurant it would cost the same for one serve as it would to cook them at home for the whole family.
Lamb Rack with a Pistachio and Mustard Crust
Tender Lamb racks roasted with a pistachio and mustard crust
Ingredients
- 2 6 or 8 Chop Lamb Racks
- 2/3 Cup Pistachio nuts, chopped
- 2 Tbsp Bread Crumbs
- 1 Tbsp Butter, melted
- 1 Tbsp Olive Oil
- 2 Tbsp Dijon Mustard
- 2 Tbsp Chives, chopped
- 2 Tbsp Parsley, chopped
- Pinch Salt
- Pinch Black pepper
Instructions
- Preheat Oven 200 C
- Line a baking dish with baking paper.
- Season lamb to your liking with salt and pepper.
- Heat large pan over high heat, brown lamb on all sides, transfer to baking dish and set aside.
- Combine nuts, crumbs, butter, oil, herbs and an extra pinch of salt and pepper.
- Spread the mustard over the meat side of the rack then press the pistachio mixture on top of mustard.
- Bake in oven until the crust is golden and the lamb is cooked to your liking. 20-25 minutes for medium rare, 30 minutes for medium and 40 minutes for medium well.
- Rest 10 minutes before serving, cutting each rack in half.
- Serve with potatoes and green vegetables.
