Hedgehog Slice

Hedgehog slice is one of the most popular slices: made from a few pantry staples its a delicious blend of biscuits and chocolate loved by young and old alike.

Like most slices hedgehog freezes well, goes well in the lunchbox and as a treat for morning or afternoon tea.

Its also pretty easy to make variations by swapping out ingredients I’ve made lemon, peanut butter, caramel versions and have all been delicious, I will endeavour to post these variations in the coming weeks.

Chocolate Hedgehog Slice

A chocolate and biscuit slice suitable for any occasion.

Ingredients
  

  • 250 gm Marie biscuits Plain sweet biscuits
  • 1/2 cup Biscuit crumbs
  • 125 gm Butter melted
  • 1 Tbsp Cocoa powder
  • 1/2 can Condensed Milk

Topping

  • 200 gm Milk chocolate
  • 1 tsp Vegetable oil
  • Sprinkles or 100's/1000's

Instructions
 

  • Line a slice tray with baking paper
  • Break biscuits into small pieces (I like to do this by hand, I can control the size of the pieces)
  • Add biscuit crumbs to biscuits. (I like to add the extra biscuit crumbs to soak up the chocolate mixture)
  • Melt butter and add cocoa, stir in so the cocoa melts smoothly
  • Add the condensed milk to the butter mixture and stir until smooth and incorporated well
  • Combine the biscuits with the condensed milk mixture, stir until biscuits are coated
  • Press into the prepared slice tray then smooth with the back of a spoon.
  • Melt the chocolate (I do this in the microwave 1 minute on high, stir then in 30 second bursts till melted)
  • Add the oil and stir until smooth then pour over slice and sprinkle with sprinkles or 100's/1000's
  • Refrigerate until set, remove from fridge 30 minutes before cutting into desired size.

Notes

The chocolate topping can be replaced with a basic chocolate icing and the sprinkles with coconut if preferred.
Depending on what I am using the slice for I cut it anywhere between 12-40 pieces.
Cut and freeze in containers or portioned in snap lock bags.
