Use a good quality ice cream and your favourite chocolates and lollies so changing it up is so easy, just swap in a different ice cream flavour and the variety of lollies or chocolates.
The ice cream can be set in a variety of moulds either large or individual. A great make ahead dessert for a no fuss, delicious end to a meal.
My daughter requests this for any special occasion.
Lolly filled Ice Cream Cake
Ingredients
- 2 Lt Vanilla Ice cream softened
- 2-3 Cups Chocolates and lollies Your choice
Instructions
- Chop all chocolates and lollies.
- Soften the ice cream and place in a large bowl.
- Stir in chocolates and lollies.
- Stir well until well mixed through.
- Spoon into a loaf tin, bowl or mould that has been lined with glad wrap.
- Place in the freezer until set again, approximately 2 hours.
- Serve sliced as is or with a sauce and berries.
Notes
Vanilla Ice cream can be replaced with chocolate ice cream, or really any ice cream adding add ins that complement that flavour.
Any chocolates or a combination of – Mars Bar, Maltesers, any filled chocolate bar, raspberry bullets etc
Lollies – Jelly snakes, raspberry jubes, Sherbet drops etc
Chocolates and lollies can be replaced with berries and broken meringues; or soak dried fruit in alcohol (brandy, bailey’s etc) and mix with ice cream and toasted slivered almonds.
