Christmas Mint Balls

I love the treats that are made at Christmas time, whether they be for ourselves or to give away as small gifts to family or friends.

Packaged in cellophane bags or in boxes they look lovely and are very festive, they make wonderful teacher/appreciation gifts.

The combination of mint and chocolate is always a winner and the truffles are super delicious as well as being pretty and although I have named them Christmas Mint Balls they can be made anytime of the year and sub out the red and green decorations for something more suitable; ie: crushed Peppermint Crisp, Chocolate Sprinkles etc or just leave plain.

Christmas Mint Balls

Ingredients
  

  • 250 Pkt Marie Biscuits
  • 3 Peppermint Crisp Bars
  • 250 gm Cream Cheese, softened
  • 1/2 tsp Peppermint Essence
  • 300 gm White Chocolate

Instructions
 

  • Blend biscuits and peppermint crisp bars in food processor until fine crumbs.
    Or Thermomix 10 Sec Speed 6.
  • Add Cream Cheese and extract and mix until combined.
    Or Thermomix Speed 2 Reverse until well combined scraping down the sides as needed. (Approximately 20 sec)
  • Roll in balls (about 2 teaspoons of mixture) and place on a tray, refrigerate until set about 30 minutes.
  • Melt the white chocolate until smooth (I place mine in a glass jug and microwave 1 minute on high then stir and on high 30 seconds maybe twice more stirring well after each time)
  • Using a chocolate dipper or 2 forks dip the balls into the melted chocolate then place back on the tray.
  • Decorate with your choice of toppings Green and Red Sprinkles, Green and Red M & M's, etc
  • Set in the refrigerator for approximately 1 hour.

Notes

You could tint your white chocolate Green or Red if desired.
To make these all year round (why wait for Christmas right) dip the balls in your choice of chocolate White, Milk or Dark and leave plain with no decorations or as you roll them coat in coconut.
