A lovely fresh salad that’s great to serve with seafood or at a barbeque. Its very easy and simple to put together, just don’t dress the salad until your ready to serve.
Its easy to add any salad vegetables that you like to this salad, or make it a complete meal by adding grilled chicken, fish or prawns to the dish.
Avocado and Mango Salad
Ingredients
- 100 g Spinach and Rocket or Mixed Salad Leaves
- 1 Carrot, cut in small matchsticks
- 1 Red Onion, sliced finely
- 1 Avocado, diced
- 1 Mango, diced
- 100 g Pkt Fried noodles I use Changs
- 1 Long Red Chilli, deseeded and finely chopped
- 1/2 Cup Cashews
Dressing
- 1/2 Cup Olive Oil
- 1/2 Cup Brown Sugar
- 2 Tbsp Fish Sauce
- 2 Tbsp Lemon Juice
- 1 Tbsp Lime Juice
Instructions
- In a large shallow dish or bowl add the salad ingredients.
- In a jar combine the dressing ingredients, shake well.
- Pour the dressing over the salad just prior to serving
Notes
You could add other salad ingredients or swap out any ingredients to your taste.
Make sure the dressing only goes on when you are about to serve to keep the salad fresh.
