This is a good old fashioned apple slice recipe that my Grandmother was renowned for, a beautiful short pastry and stewed apple filling. I use a can of pie apple most of the time instead of cooking the apple filling and it works very well.
Since my Nana has passed it is a recipe that is always made by my Aunty for any family get together and it is thoroughly enjoyed by everyone.
Nanna’s Apple Slice
Layers of short pastry with a filling of stewed apples
Ingredients
- 500 gm Cooking Apples
- 1 Tbsp Sugar
- 2 Cups SR Flour
- 1 Cup Plain Flour
- 125 gm Butter, diced, room temperature
- 1/2 Cup Sugar
- 1 Egg
- 1/2 Cup Water Only use what is needed
- 200 gm Icing Mixture
- 1 tsp Butter, extra
- Ground Cinnamon
Instructions
- Peel and chop the apples and cook in saucepan with sugar and a little water (less than 1/4 cup)
- Preheat the oven 180C
- Line a slice tray with baking paper.
- In a large bowl cream the butter and sugar either by mixer or hand.
- Add the egg and beat lightly.
- Mix in the flour and work until a stiff dough, adding a little water if to dry.
- Knead a little until smooth and cut dough in half.
- Roll out the pastry to fit the slice tray and place one portion on the base.
- Spread the apples over the base.
- Top with the remaining half of the pastry.
- Cook for approximately 30-40 minutes or until pastry is cooked.
- Set aside to cool.
- Make icing with the icing mixture, extra butter and enough boiling water to make a nice smooth spreadable icing.
- Spread icing over cooled the slice and sprinkle with cinnamon.
Notes
Replace the cooking apples with a tin of pie apple for a convenience.
