Easy Mint Cookies and Cream Ice cream Bomb is the perfect make ahead dessert and best of all it only takes 15 minutes to make. You can make it in a large pudding mould or in individual moulds.
Of course the flavours of this dessert can be changed to your liking but I think this flavour combination works well for Christmas time, it is a relatively economical dessert as it uses fairly basic ingredients.
You can use store bought Ice Magic or make your own to top the the Ice cream.
Easy Mint Cookies and Cream Ice cream Bomb
Cookies and cream with candy cane ice cream
Ingredients
- 1 pkt Oreo biscuits 128gm
- 50 gm Candy Canes, mint flavour
- 600 ml Cream
- 1 can Condensed Milk
- 2 Tbsp Full cream milk powder
- 1 tsp Vanilla bean paste
- Ice Magic
Instructions
- Line a pudding bowl with a double layer of glad wrap,
- Coarsely chop the Oreo biscuits.
- Place the candy canes in a snap lock bag then wrap in a tea towel and gently bash with a mallet or a rolling pin until coarsely crushed, reserve 2 tablespoons for topping.
- In a bowl mixing with an electric beater, beat the cream, condensed milk, milk powder and vanilla paste for 3-5 minutes or until it is thick and creamy.
- Fold in the biscuits and crushed candy canes.
- Spoon into the prepared pan, bring the glad wrap over the top of the ice cream to seal. Place in the freezer for 5 hours or until set.
- To serve, remove from the freezer, unmould and unwrap, place on your serving plate and pour over the Ice Magic and sprinkle with reserved candy canes.
