Double Choc Chip Cookies

Irresistible chocolate biscuits jam packed with chocolate chips, I’ve also made them with M&M’s, Smarties etc.

Fudgy Double Chocolate chip Cookies

Deliciously fudgy on the inside, this is a one bowl easy recipe, no creaming the butter and sugar for this one and you can freeze the dough in logs or in balls for baking in a hurry.

They are perfect for lunch boxes and snacks for everyone big or small.

Double Chocolate Chip Cookies

Ingredients
  

  • 150 gm Butter
  • 1/2 Cup Brown sugar
  • 1/2 Cup White sugar
  • 2 tsp Vanilla Extract
  • 1 Egg
  • 2 Cup Plain flour
  • 1/3 Cup Cocoa
  • 1 tsp Bicarbonate Soda
  • 200 gm Chocolate Chips, any

Instructions
 

  • Preheat the oven 170 C.
  • Line 4 trays with baking paper.
  • In a large bowl melt the butter. I use the microwave.
  • Add the both sugars, vanilla and cocoa, stir well to combine.
  • Mix in the egg.
  • Stir in the flour and bicarb soda.
  • Mix in the chocolate chips .
  • Roll 1 tablespoon of the dough into balls and place on the trays, flatten slightly.
  • Bake for 10 minutes, turning halfway.
  • Cookies are cooked when they will twist on the tray without breaking.
  • Cool on trays.
  • Store in airtight container for up to 2 weeks.

Notes

Use any chocolate chips, or a combination, Dark, Milk, White, Caramilk, Peanut butter chips, M&M’s, smarties or any other chocolate.
