Savoury Bread an Butter Pudding

Also known as a Stratta, this is a great way of using up leftover stale bread/rolls/croissants adding any other ingredients such as Ham/bacon/sundried tomatoes/chicken/ fetta/ etc. all soaked in an eggy cheese custard.

Its a great dish to prepare ahead of time, even the night before then cook in the morning for a simple breakfast/brunch for a crowd.

It is a cross between French toast and a quiche and delicious, perfect for brunch, lunch or a light dinner served with a salad.

Savoury Bread and Butter Pudding

Ingredients
  

  • 4 Rashers Bacon, diced or Ham/Chorizo
  • 2 Spring onions, sliced or 1/2 Onion diced
  • 3 Cups Bread, diced
  • 4 Eggs
  • 2 Cups Milk
  • 1 Cup Tasty Cheese, grated
  • 1 Tbsp Dijon Mustard or Seeded Mustard
  • pinch Salt
  • Pinch Black Pepper

Instructions
 

  • Cook bacon: cook bacon and onion in small pan about 2-3 minutes or until soft.
  • Custard Mixture: In a large bowl whisk together eggs, milk, mustard, salt and pepper.
  • Soak Bread: To the Custard add the bread, bacon mixture, 3/4 cup cheese and any other add ins, mix well, set aside in the fridge covered for at least 30 minutes and up to overnight.
  • Preheat oven to 180C
  • Prepare dish: Grease a 6 cup oven proof dish and pour in the bread mixture and sprinkle with remaining cheese (use more if you like)
  • Bake for 25 minutes turn and cook a further 20-25 minutes, cover loosely with foil if its browning too much. Cook until puffed and the custard is cooked.

Notes

Any types of bread are suitable, French stick, Ciabatta, Sliced bread, Bread rolls, Vienna loaf, Pana de casa loaf.
Add any of the following add ins: Cooked sliced mushrooms, Cooked sliced Chorizo, Sun dried tomatoes, Roasted Capsicums, Crumbled fetta, Lightly cooked spinach leaves etc with the bacon or instead of.
Perfect served with a salad.
