Anzac Self Saucing Pudding

All the lovely flavours of an Anzac biscuit in the form of a delicious warm dessert that only needs a spoonful of cream.

It is the perfect dessert to enjoy on the coldest of nights, using the most basic pantry ingredients so it can be prepared at the last minute.

I found this recipe on Australia’s Best Recipe site and added a few tweaks.

Anzac Self Saucing Pudding

An Anzac flavoured Self Saucing Pudding

Ingredients
  

  • 1 1/2 Cups Self Raising Flour
  • 100 gm Butter
  • 1/2 Cup Rolled Oats
  • 1/2 Cup Sugar
  • 1/4 Cup Coconut
  • 1/2 tsp Mixed Spice
  • 1 Cup Milk
  • 1 Egg
  • 1 tsp Vanilla Essence
Sauce
  • 50 gm Butter
  • 1/2 Cup Golden Syrup
  • 1/2 Cup Brown Sugar
  • 2 Cups Boiling Water

Method
 

  1. Preheat oven to 160C
  2. Sift the flour and rub in the butter with your fingers.
  3. Add the rolled oats, sugar, coconut and spice, mix well.
  4. Combine the milk, eggs and vanilla.
  5. Add the wet ingredients to the dry ingredients and mix well.
  6. Spread the mixture into a greased 2 litre ovenproof dish.
Sauce
  1. In a jug mix together the butter, syrup, sugar and boiling water.
  2. Pour the sauce over the cake mixture using the back of a large spoon so the liquid doesn't pool.
  3. Bake for 30-40 minutes or until cooked.

Notes

Serve with cream or ice cream.
