Rocky Road

Although this is not a traditional rocky road it is super yummy and so very addictive, and swapping out your favourite lollies is very easy. Using good quality chocolate is where I start, I usually Cadbury Milk Chocolate blocks or Freckleberry Chocolate blocks for a beautiful smooth base. The better the quality of chocolate and lollies you use the better the end result will be, just try stopping at one piece.

Milk, Dark, White or Caramilk chocolate can be used as a base and add any or all of your favourite add ins: Nuts, Toasted Coconut, Marshmallows, Cherries are all traditional Rocky Road ingredients but my recipe has Marshmallows, Clinkers and Jelly Raspberry Lollies.

You could use any lollies ie: Turkish Delight, Jaffa’s, Mint Leaves, Lolly Snakes, Maltesers etc. I have made a mint version using Mint Leaves, Mint Slice Biscuits, White Marshmallows and Mint M & M’s.

Clinker Rocky Road

Chocolate Rocky Road with Clinkers, Marshmallows and Lolly Raspberries. Try stopping at one piece.

Ingredients
  

  • 2-3 Blocks Milk Chocolate, broken
  • 1 Pkt Clinker Lollies
  • 1 Pkt Pink and White Marshmallows
  • 1 Pkt Raspberry Lollies (Jube type)

Instructions
 

  • Chop the Clinkers into 3-4 pieces.
  • Chop the Raspberry Lollies into 3 pieces, adding to the Clinkers.
  • Chop the Marshmallows into 2-3 pieces, adding to the Clinkers and Raspberries.
  • Melt the chocolate in a large glass bowl in the microwave for approximately 3 minutes, in 30 second bursts stirring after each 30 seconds. Make sure the bowl and spoon are completely dry and only use a metal spoon. Any drop of water will make the chocolate seize (ruin).
  • Add the chopped lollies and marshmallows and stir in well.
  • Press into a greaseproof lined slice tray, allow to set in the fridge for about 2 hours.
  • Remove from the fridge and cut into portions.
