A delicious childhood memory, Honey joys were and as far as I know still are a child’s party staple, but the adults do love to sneak one (or more) off the table to reminisce.
Made with pantry basics, honey joys are super easy and quick to make, making it the perfect recipe to make with children, they will love the process and also the end result.
Honey joys are also great for an occasional treat in lunchboxes.
Honey Joys
Honey and cornflake treats
Ingredients
- 90 gm Butter
- 1/4 Cup Castor sugar
- 2 Tbsp Honey
- 4 Cups Cornflakes
Instructions
- Preheat oven 150 C
- Line a 24 pattypan with paper cases.
- In a large saucepan heat together butter, sugar and honey, stir until melted and becomes frothy.
- Stir in the Cornflakes and combine well.
- Spoon into patty cases.
- Bake in the oven for 10 minutes, allow to cool. (this step is optional we prefer ours go straight in the fridge)

Using Gluten Free Cornflakes makes this a gluten free recipe.
Baking the honey joys is optional as we prefer ours unbaked and stored in the fridge.
