Meringues are very popular with our family and friends and we love having them as a serve yourself dessert, with many toppings you make them up with your favourite combinations.
Meringues are a great make ahead dessert as they keep very well stored in an airtight container layered between greaseproof paper.

Crispy meringues
Ingredients
- 2 Egg Whites
- 1/2 Cup Castor Sugar
- 1/4 tsp Cream of Tartar
- 1/4 tsp Vanilla Essence
Instructions
- Preheat oven 120 C.
- In a stand mixer or using a handheld mixer beat the egg whites on low until foamy then on medium until they form peaks that hold their shape.
- Gradually add the sugar 1 Tbsp at a time, beating until the sugar is dissolved.
- Beat in vanilla and Cream of Tartar. The meringue should be thick and glossy.
- You could add a couple of drops of food colouring at this stage if you wish to.
- Either spoon on to lined oven trays I use dessert spoon size, or pipe from a piping bag.
- Bake in oven for 1 hour, cool in oven to help dry the meringue out.
Notes
You can make mini meringues using teaspoons.
Your can make meringue nests by piping a bit larger and with a rim around the edge.
Serve with cream and your choice of berries, fruits, grated chocolate, lemon curd, sauces etc.
